Ingredients

1 head (approx. 250g) broccoli

35g fresh brown breadcrumbs

50g back bacon, any excess fat trimmed, chopped

½ large onion, finely diced

50g mature Cheddar cheese, grated

a small handful of fresh flat-leaf parsley, chopped

1 egg, whisked

a pinch of salt

a pinch of freshly ground black pepper

Method

Preheat the oven to 200°C/gas mark 6 and line a baking tray with baking parchment.

Fill a large saucepan with water and bring to the boil. Place the broccoli head in (whole) and cook for 3 minutes. Take off the heat and immediately immerse the broccoli head in cold water, then pat dry with a tea towel and chop the broccoli up into small pieces, or pulse in a food processor. Place the chopped broccoli in a large bowl, and add the breadcrumbs.

Place a frying pan over a medium heat and add the bacon and onion. Fry for 2–3 minutes, until the bacon and onion are cooked but not browned. Add the bacon and onion to the bowl with the broccoli and breadcrumbs, then add the cheese, parsley, whisked egg, and salt and pepper. Use your hands to combine all the ingredients, kneading everything together to make a burger-like mixture. Take handfuls of the mixture, form them into burger shapes and place on the lined baking tray. This recipe will make 10 burgers. Bake for 15 minutes and serve.

Tips & Tweaks

•Whizz up a thick slice of brown bread in a food processor to make the breadcrumbs.

•The mixture seems like it will fall apart, but don’t worry – as it cooks, the egg and cheese bind everything together.

•If you like heat, a little sriracha sauce works a treat with these, or you can sprinkle over some dried chilli flakes.

•A portion is only 160 calories, so you can afford to add a few extras, even on a Light Day. I love these with a poached egg on top (1 egg = 75 cals).
